CUCUMBER SALAD 
3 cucumbers, pared and thinly sliced
2 tsp. salt
3 tbsp. white vinegar
1 tbsp. sugar
1/2 tsp. Hungarian paprika
1/4 tsp. pepper
Optional garnish: green pepper rings, tomato slices

Place cucumbers in bowl and sprinkle with salt. Set aside for 1 to 1 1/2 hours.

Meanwhile combine vinegar, water and sugar and set aside. When cucumbers have set, squeeze with your hand to remove liquid. Put squeezed cucumbers in a salad bowl and pour the vinegar mixture over; toss lightly. Sprinkle with paprika and pepper. Garnish with green pepper rings and tomato slices if you wish.
