RUBY ENNIS' FRUIT CAKE 
1 lb. pineapple green and yellow (1/2 lb. each)
1 lb. red cherries
1 lb. coconut
3 lbs. nuts
4 c. sugar
4 c. self-rising flour
1 doz. eggs
1 lb. butter
1/2 lb. chopped dates

Cream butter and sugar. Add eggs and flour. Mix all fruit together and toss well. Fold in batter. Bake in dish pan. Stir every 15 minutes. 350 degrees for 1 hour and 15 minutes.

Pack in two medium sized tube cake pans. Place back in oven and turn oven down low. Let stay for about 15 to 20 minutes until cake is set. Excellent fruit cake.
