HIDDEN JAM MUFFINS 
2 c. sifted all-purpose flour
1/3 c. Pet instant milk (in dry form)
4 tsp. baking powder
1 tsp. salt
1/4 c. sugar
1/4 c. melted shortening or vegetable oil
1 egg
1 c. water
1/4 c. jam (any flavor)

Sift into a 1 1/2 quart bowl, flour, dry milk, baking powder, salt and sugar. Add all at once rest of ingredients and mix well. Spoon 1/2 batter into 12 greased muffin cups, filling each cup about 1/3 full. Drop about a teaspoon of jam into center of each. Spoon rest of batter into cups. Sprinkle over tops sugar and cinnamon. Bake near center of oven 20 to 25 minutes or until brown. Serves 6-8.

TOPPING:

1/4 c. sugar
1/2 tsp. cinnamon

Mix well.
