MOM'S HARVARD BEETS 
1 lb. fresh beets, cooked, peeled & sliced
2 tbsp. sugar
1 tbsp. cornstarch
1/4 tsp. salt
1/4 c. vinegar
2 tbsp. butter
1/3 c. beet juice

Combine sugar, cornstarch and salt. Add beet juice, cook over low heat. Add butter and stir. Then add vinegar and cook until thick. Add beets to heat.
