DIABETIC APPLE CAKE 
2 1/2 c. flour
2 tsp. cinnamon
1 tsp. salt
2 tsp. vanilla
1 tsp. liquid sugar substitute
4 c. grated apples
3 tsp. baking soda
1/2 tsp. nutmeg
1 c. butter
2 eggs
1 c. walnuts

Mix dry ingredients; add butter, vanilla, eggs, sugar substitute and blend well. Stir in grated apples and walnuts.

Bake in a 9 x 13 pan at 375°F for 40-45 minutes.

1 serving equals 1/2 fat exchange, 1 break and 1/2 fruit.
