SPICY SHRIMP IN TORTILLAS 
6 flour tortillas
2 tbsp. olive oil
1 med. onion, chopped
1 lg. garlic clove, minced
2 tomatoes, chopped
4 jalapeno peppers, chopped
1/2 to 1 lb. cleaned and peeled shrimp
3 tbsp. fresh lime juice
1/2 tsp. salt
1/2 avocado, mashed with 1 tbsp. fresh lime juice
Sour cream

Heat oil in large skillet over medium heat. Add onions and garlic and saute until tender. Add tomatoes, jalapenos, and shrimp. Cook, stirring gently, until shrimp turns pink and opaque. Fold in lime juice. Heat tortillas. Serve with sour cream and avocado. Makes 2 servings.
