PEACH PICKLE 
7 lbs. peeled firm peaches
2 1/2 lbs. sugar
1 1/3 c. vinegar
2 heaping tbsp. pickling spice
1 heaping tbsp whole cloves
1 heaping tbsp. allspice

Peel peaches and cover with mild salt water. Put sugar and vinegar in a canning boiler. Tie spices in a cheesecloth and put in boiler with sugar and vinegar and boil for 5 minutes. Place peaches in boiler, a few at a time, and boil for 15 minutes. Put peaches in sterilized fruit jars and cover with juice mixture and seal.
