MA BEEKER'S STRAWBERRY PIE | |
For her sons who do not cook. PIE CRUST: Buy a ready-made crust. STRAWBERRY FILLING: 1 1/2 c. white sugar (yum, the good stuff) 1 1/2 c. water 1/4 c. cornstarch (ask the grocer where to find it) Pinch of salt 1 box strawberry Jello Only as much as you can easily get between your fingers, it isn't a contest to see how much you can hold between your fingers! Stir and cook sugar, water, cornstarch, and salt (over stove, not in the oven) until thick and clear (not clear like glass.) Add Jello to mixture. Allow the brew to set and cool off. Pour a small amount of the concoction into the pie shell (which you should have bought pre-baked, have already thawed out.) Add 1 or 2 quarts (box) fresh strawberries. Pour mixture (that you have just made on the stove) over the berries. Add more berries, then more mixture. End with berries. Set the pie in the refrigerator. Serve chilled with whipped cream. Enjoy.
