PORK CHOPS WITH A TWIST 
6 loin or blade chops
2 tbsp. oil
1 med. onion, chopped
1 bay leaf
1 tsp. salt
1 1/2 c. water
2 tbsp. brown sugar
4 tbsp. vinegar
6 tbsp. catsup
2/3 c. raisins
1/2 c. cold water
1 tbsp. corn starch
6 c. or more Minute Rice

Put oil in skillet, add pork and brown well on each side, drain off oil. In small bowl add the next 8 ingredients. Mix well, put over pork chops. Cover and SIMMER 1 hour or until pork chops are tender. Remove pork chops. In small bowl mix together cold water and cornstarch. Add to raisins mixture until it is the consistency of gravy. Put raisin mixture over rice.

Love this. My mom made this while growing up and it is a favorite of mine. In fact I am making it tonight. I do not however cook the pork for an hour as directed, just until the pork is 140°F. Kind of like a BBQ sauce with the sweet raisins added to it and served over rice. Looks good and tastes great.
