PORK CHOPS AND POTATO DRESSING 
3 c. hot mashed potatoes
1 c. Pepperidge Farm Herb stuffing
1 grated onion or 1 tsp. instant onion
1 egg
1/2 c. finely chopped salt pork or bacon drippings
1 pinch oregano
Salt and pepper to taste

Mash potatoes thoroughly while hot and add stuffing, onion, bacon drippings or salt pork, salt, pepper and slightly beaten egg. Mix well. Place 1/2 the dressing into shallow greased baking dish. Brown pork chops well in skillet and place on dressing. Put the rest of the dressing on top to cover. Bake at 375 degrees until dressing is nicely browned, approximately 1 hour.
