PICKLED MUSHROOMS 
1 lb. fresh mushrooms, washed
1/4 c. tarragon vinegar
1 tsp. dried chervil (optional)
3/4 c. olive oil
1/4 c. chopped parsley
1 clove garlic, minced
Salt and coarse pepper

Place mushrooms in boiling water EXACTLY 45 seconds. Drain and place in jar. Immediately cover with other ingredients, blended. Store in refrigerator at least 2 days before serving.
