ZUCCHINI-CHEDDAR BAKE 
8 slices bacon, cooked and crumbled
4-6 sm. zucchini, sliced
1/2 lb. cheddar cheese, grated
2-4 tbsp. bread crumbs, stirred into 1 tbsp. melted butter

Lightly cook zucchini; drain and salt. Put half into oiled casserole dish. Spread half the egg mixture (below) over. Sprinkle half the cheese, then all of the crumbled bacon. Repeat the zucchini, egg mixture and cheese layers. Top with buttered bread crumbs. Bake uncovered at 350 degrees for 25-30 minutes.

EGG MIXTURE:

2 eggs, separated
1 c. (or more) sour cream
2 tbsp. flour

Beat yolks. Add sour cream and flour. Beat egg whites until stiff and stir into yolk mixture.
