SPINACH-CHEESE QUICHE 
24 oz. lowfat cottage cheese
6 eggs, beaten
1/4 c. melted butter
1/2 lb. Swiss cheese, cubed 1/2 inch
1 (10 oz.) pkg. frozen spinach (use liquid)
1/2 c. flour
1 sm. onion, minced

Saute onion in butter, thaw spinach. Combine all ingredients and bake 1 hour in 9x13 inch greased pan at 350 degrees. Serves 8.
