POTATO SALAD 
6 lg. potatoes, cooked, peeled, cut in med. size cubes
3-4 green onions, washed, sliced thin
2 lg. ribs celery, washed, sliced thin
4 hard boiled eggs, coarsely chopped
5-6 sm. sweet (gherkins) pickles, chopped coarsely
Mayonnaise (no salad dressing, Hellmann's is best!)
Mustard (1 tbsp, approximately)
Salt
Pepper
Paprika

Place potatoes, onions, celery, eggs and pickles in bowl. Stir in enough mayonnaise to make it creamy. Add mustard, salt and pepper to your taste. Sprinkle with paprika. Cover and refrigerate for a few hours to let flavors mingle. Serves 6.
