POTATO DINNER ROLLS 
1 pkg. dry yeast
1/4 c. warm water
1/2 c. hot mashed potatoes
1 c. milk, scalded & cooled to lukewarm
1/4 c. butter
1/4 c. sugar
1 1/4 tsp. salt
1 egg
2-3 c. flour

In a bowl, dissolve yeast in water. Stir in sugar, salt, softened butter, egg, milk and 1 cup flour. Mix with a spoon until smooth. Add enough remaining flour to handle easily. Turn onto lightly floured board. Knead until smooth, about 5 minutes.

Place in a greased bowl, bring greased side up. Cover with cloth. Let rise in a warm place until double, about 1 1/2 hours. Punch down; put on board, cover with bowl and let rest 10 minutes. Shape into 24 rolls. Place on a greased baking sheet. Let rise. Heat oven to 350 degrees. Bake 12-15 minutes until brown. Brush tops with butter.
