POTATO CASSEROLE 
8 med. potatoes
1 can cream of chicken soup
1 1/2 c. sour cream
1/4 c. melted butter
1 med. onion, chopped
2 c. grated Cheddar cheese
1/2 c. potato chips
1/2 tsp. salt
1/4 tsp. pepper

Boil (about 15 minutes) potatoes. After they have cooled grate them. After they are grated, mix them with all ingredients except 1/2 cup of cheese and the potato chips. Bake at 350 degrees in an uncovered casserole dish for 30 minutes. Top with the remaining 1/2 cup of cheese and then the potato chips. Bake for another 10-15 minutes. This can be served at a dinner or as a brunch item.
