EGGPLANT DRESSING 
3 c. eggplant, chopped
1 bell pepper
1 onion
1/2 lb. ground meat, browned
3 hot peppers
Oil
3 c. cooked rice

Peel eggplant and chop into small pieces. Boil eggplant until tender with salt. Chop onions and have them ready. Heat oil in skillet, add chopped onions and cook about 3 minutes, then add eggplant, bell peppers and hot peppers. Let this cook down real good, then add ground meat. Season to taste. Add rice if mix seems too wet, then add green onions.
