FRIED RABBIT 
2 lbs. rabbit, dressed
1/2 c. flour
1 egg
1/2 c. milk
1/4 tsp. salt
Salt and pepper to taste

Beat the egg, add milk and salt, stir in flour. Cut rabbit in 6 pieces. Dip rabbit pieces in batter. Place in iron skillet in 1/4 inch Crisco, hot enough to set batter quickly. Brown evenly, then reduce heat for 25-30 minutes, or until tender, garnish with parsley. Serve with brown gravy.

BROWN GRAVY:

1 1/2 tbsp. flour
1 c. milk
1/2 tsp. parsley
Salt and pepper to taste
