GREAT SMOKEY RABBIT CASSEROLE 
1-2 rabbits, depending on size
1/2 tsp. salt
Fresh ground pepper to taste
1/2 tsp. ground thyme
2-3 bay leaves
4-5 slices bacon, cut in pieces
1 c. water
1 c. seasoned bread crumbs

1. Clean and cut rabbits into serving size pieces. Soak young rabbit 1-2 hours in salt water, 12-18 hours for older rabbits using 1 teaspoon salt per quart of water. After soaking, wrap meat in a damp cloth and store overnight in a cold place.

2. Butter a casserole dish large enough to hold the meat. Put in a layer of rabbit, sprinkle with salt, pepper, thyme, and bay leaves. Add a layer of bacon pieces.

3. Repeat until all ingredients are used. Pour water over all. Cover and bake at 350 degrees until rabbit is tender (about 1-2 hours). This will vary according to the age of the rabbit.

4. Remove cover and sprinkle seasoned bread crumbs over. Bake 30 minutes longer. Serve.
