APPLE SOUR CREAM SALAD 
1 pkg. (8 servings) Jello lemon flavor
1 1/2 c. boiling water
1 c. apple juice and/or water
Ice cubes
1 1/2 c. diced apple
1 (8 oz.) sour cream

Dissolve gelatin in boiling water. Combine apple juice and ice cubes to make 2 1/2 cups. Add to gelatin, stirring until slightly thickened. Remove any unmelted ice. Measure 1 cup; blend into sour cream. Add apple and remaining gelatin. Pour into bowl and chill about 15 minutes until set, but not firm. Top with sour cream mixture. Chill until set. Serves 10.
