MATZA KUGEL (EASY GRATED POTATO) 
6 med. white potatoes (2 1/2 lb.)
1 lg. onion
1 lg. carrot
1/4 c. matzo meal
1 1/2 tsp. salt
1/4 tsp. white pepper
2 eggs, beaten
1/4 c. peanut oil

Pare vegetables and put through meat grinder, using the fine blade. Add remaining ingredients and mix thoroughly. Pour into a well greased 1 1/2 quart baking dish. Bake in a moderate oven (375 degrees) about 1 hour or until top is browned and crisp at the edges. Yields 6 to 8 servings.
