MASHED POTATO CANDY | |
1 c. warm (unseasoned) mashed potatoes 1/2 tsp. salt 2 tsp. vanilla 2 lbs. confectioners' sugar (buy 1 lb. extra) 1 lb. chocolate for dipping 2/3 c. ground salted peanuts & (or) 1 c. shredded coconut Combine potatoes, salt and vanilla in 4 quart mixing bowl. Sift confectioners' sugar over mixture, stirring and adding 1 cup at a time. Mixture will liquify first, then gradually begin to thicken. Continue until it becomes a stiff dough. (It may not take 2 pounds of confectioners' sugar - it may take MORE - it depends on the water quantity in the potatoes.) Knead, cover with damp cloth. Chill until a small spoonful can be rolled into a ball. Dip 1/2 inch balls in melted chocolate - then roll in nuts or coconut or both! Makes about 8 dozen 1/2 inch balls or 2 pounds. This is our favorite family project at Christmas! |
