Cheese sauce
Rice Pilaf
Boneless chicken breast fillets
About 1 tbsp. per person grated Cheddar cheese
Broccoli spears, steamed (a little crunchy)
Bacon strips, cooked until crisp
Sliced almonds, toasted (about 1 tbsp. per person)

Prepare cheese sauce and Rice Pilaf. Set both aside and keep warm. Bread and fry the chicken fillets in peanut oil until almost done but not quite. Place bed of Rice Pilaf in oven-proof baking dish. Top rice with chicken fillets. Sprinkle grated Cheddar over fillets. Top each with 1 broccoli spear, 1 strips of bacon, some toasted almond slices, and some cheese sauce. Place dish in 350 degree oven for about 5 minutes or until cheese melts and serve immediately.
