SWEET POTATO SALAD | |
2 c. mashed sweet potatoes 1/2 c. sugar 1 large can crushed pineapple (reserve juice) 2 c. miniature marshmallows 6 oz. cream cheese, softened 1/2 c. nuts Mix all together and spread in 9 x 9 x 2-inch dish. Topping: 1/2 c. sugar juice from pineapple 3 tbsp. butter 2 tbsp. flour 1 large Cool Whip Mix sugar, flour and juice. Cook until thick. Cool. Fold into Cool Whip. Spread over potatoes and refrigerate. |
