MEXICAN HOMINY 
1 large can hominy
1 #2 can tomatoes
1/2 c. bacon (sliced and cooked)
1/2 pound shredded cheese
2 tsp. chili powder
1 large onion, chopped

Fry bacon until crisp. Leave in pan and add tomatoes, hominy, chili powder and salt and pepper to taste. Cook slowly until thick. Put 1/2 the mixture in a casserole. Add 1/2 of the onions and cheese. Add the remainder of the hominy mixture and top with the remaining cheese and onion. Bake in a slow over (325) about 3 minutes. Serve hot. Can be cooked in microwave 12-15 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
