ZUCCHINI RELISH 
4 c. ground zucchini
3 c. ground carrot
4 1/2 c. ground onion
1 1/2 c. ground green pepper
1/4 c. salt
2 1/4 c. distilled white vinegar
3/4 c. sugar
1 tbsp. celery seed

1. Combine all ingredients in a large kettle.

2. Cover and simmer 20 minutes or until vegetables are crisp tender.

3. Pack into hot, sterilized jars. Seal. Process in boiling water bath 5 minutes. (Makes 4 to 5 pints)
