LOUISIANA SHRIMP SALAD 
1 c. cold rice
1 lb. cooked and cleaned shrimp
1/4 tsp. salt
1/2 c. slivered green pepper
8 or 9 sm. green onions, thinly sliced
1/2 c. celery, finely sliced
1/2 c. raw cauliflower, slivered
1/4 c. dill pickles, slivered
1 tbsp. fresh lemon juice
4 tbsp. French dressing
1/2 c. mayonnaise

Combine the rice, shrimp, salt, green pepper, green onions, celery, cauliflower, and dill pickles in a large bowl. Combine the lemon juice, French dressing and mayonnaise in a small bowl and blend until smooth. Pour dressing over the rice combination, fold well and chill. Serve on a lettuce-lined platter.
