CARROT COOKIES 
1 cup sugar
3/4 cup shortening
1 cup cooked carrots
2 cups all-purpose flour
1 cup chopped nuts
1 egg
1/2 tsp. salt
2 tsp. baking powder
1 tsp. vanilla
1/2 cup orange juice
grated orange rind (optional)
powdered sugar

Mash cooked carrots and allow to cool. Cream sugar and shortening together. Add carrots, flour, nuts, egg, salt, baking powder and vanilla. Shape into walnut size balls and flatten slightly before placing on greased and floured cookie sheet. Bake at 350°F for 12 to 15 minutes. Remove from cookie sheet to cooling rack with waxed paper or larger pan beneath. Ice with glaze of orange juice and powdered sugar while cookies are hot. Garnish with grated orange rind if desired.
