OATMEAL-CARROT COOKIES 
3/4 c. butter
1 3/4 c. flour
3/4 c. packed brown sugar
1/2 c. sugar
1 egg
1 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. baking soda
1/4 tsp. cloves
1 tsp. vanilla
2 c. oats (oatmeal)
1 c. finely shredded carrots
1/2 c. raisins (optional)

In a mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds or until softened. Add about half of the flour, the brown sugar, sugar, egg, baking powder, cinnamon, baking soda, cloves and vanilla. Beat until combined, scraping sides of bowl.

Beat or stir in remaining flour. Stir in oats, carrots and raisins. Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet. Bake in a 375 degree oven for 10 to 12 minutes. Makes about 4 dozen.

Just made these cookies with some extra carrots from the garden so they don't go to waste. The cookies were sooo good! I ate way way too many and kept telling myself they're good for me, lol.
