RITA'S OATMEAL CARROT COOKIES 
3/4 c. butter
1 3/4 c. flour
1 tsp. baking powder
1/4 tsp. baking soda
1 c. finely shredded carrots
3/4 c. brown sugar
1/2 c. white sugar
1 egg
2 c. oatmeal
Butterscotch or chocolate chips, nuts, raisins (optional)

Beat butter until softened. Add sugars, egg and 1/2 cup flour. Beat until combined. Stir in remaining flour, oats and carrots. Add chips, nuts or raisins. Bake at 375 degrees for 10-12 minutes.
