CARROT COOKIES 
1 c. cooked carrots
3/4 c. sugar
3/4 c. coconut
2 c. flour
1/2 tsp. salt
1 c. Crisco, solid or oil
2 eggs, well beaten
1 tsp. vanilla
2 tsp. baking powder

CARROT COOKIE ICING:

1/3 c. soft butter
1 orange rind, grated
2 c. powdered sugar
3 tbsp. orange juice

Have ready enough cooked and mashed carrots for 1 cup and cool them. Cream the Crisco and sugar. Add the eggs and cream well. Add the carrots, coconut, and vanilla. Add flour, baking soda and salt. Chill dough well. Drop by spoonfuls onto cookie sheet and flatten. Bake at 375 degrees for 10-15 minutes.

Mix the icing ingredients together until creamy and frost the cookies. It will really add to their flavor!
