OATMEAL CARROT COOKIES 
1/4 c. shortening
3/4 c. brown sugar, packed
1/4 c. water
2 eggs
1 c. peanut butter
1 tsp. vanilla
1 c. grated carrot
1 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
3 c. quick cooking rolled oats

Preheat oven to 375 degrees. Cream shortening and sugar. Blend in water, eggs, peanut butter, vanilla and carrot. Sift flour, soda and salt together and stir into other ingredients. Stir in oats until completely moistened. Roll dough into 1 inch diameter balls and place on greased baking sheet. Press balls flat with fork. Bake 10 to 12 minutes. Makes 5 dozen.
