1/4 c. Velveeta cheese
4 med. potatoes
1 sm. onion
1 sm. red pepper
Milk
butter
Salt to taste

Prepare mashed potatoes. Saute peppers and onions. Add cheese and all ingredients. Put potato mixture in a casserole dish. Bake for 1/2 hour at 350 degrees.
