CORNMEAL PANCAKES 
1 c. cornmeal
1/2 c. self rising flour
1 tbsp. sugar
3/4 tsp. salt
1 c. milk
1 egg
Vegetable oil

Combine milk, egg, and 1 tablespoon oil in mixing bowl. Add flour, sugar, and salt. Pour oil in medium hot frying pan. When hot, spoon batter into pan by tablespoonful. Spread slightly. Cook until brown. Turn and cook until crisp on the other side. Continue with rest of batter.
