JOY'S CORNMEAL PANCAKES | |
1 c. flour 1 c. yellow corn meal 3 tsp. baking powder 3 tbsp. sugar 2 lg. eggs 1 1/2 c. milk 1/4 c. salad oil In a large bowl mix flour, corn meal, baking powder and sugar. In another bowl, beat with a rotary beater; eggs and milk. Pour the egg mixture into the flour mixture. Stir with a large spoon until all the flour mixture is moistened. Then stir in the oil with the spoon, don't beat. Small lumps disappear in baking. Pour batter onto hot griddle (375 degrees). Cook pancakes until bubbles form on top, then turn and brown on other side. NOTE: Recipe is easily halved or doubled, you can make lots and freeze it. DO NOT add the oil until you are ready to cook the pancakes. |
