PUMPKIN-CORNMEAL PANCAKES 
SEASONING MIX:

1/2 tsp. allspice
1/4 tsp. nutmeg
1/4 tsp. cinnamon
2 eggs

BATTER:

2 c. yellow cornmeal
1/4 c. packed brown sugar
1/2 tsp. salt
1 tsp. baking soda
4 tbsp. unsalted butter
1 1/2 c. milk
1 c. canned pumpkin
1 tbsp. vanilla

Combine seasoning mix in cup. Whip eggs in medium bowl until frothy. Mix cornmeal, sugar, salt and baking soda in large bowl. Melt butter in small saucepan over low heat and let it brown slowly about 4-5 minutes.

Stir in milk and heat just to the boiling point. Pour milk into cornmeal and blend. Add pumpkin and blend with whisk. Stir in seasoning mix and vanilla. Whisk in eggs. Drop batter onto skillet (hot), 2-3 tablespoonfuls, and fry until lightly browned; turn.
