COUNTRY INN CORN MUFFINS 
2 1/2 c. cornmeal
2 c. flour
2/3 c. sugar
2/3 c. brown sugar
2 tsp. baking soda
1 tsp. salt
2 lg. eggs
2 c. buttermilk
3/4 c. vegetable oil

In large bowl combine dry ingredients, in a second bowl beat eggs. Add buttermilk and oil. Add liquid to dry ingredients, stirring only until blended. Spoon into greased muffin pans. Preheat oven to 400 degrees and bake 20 to 25 minutes or until golden brown. 18 regular muffins, 12 large muffins.
