RHUBARB MUFFINS 
1 1/2 c. brown sugar
1/2 c. cooking oil
1 egg
2 tsp. vanilla
1 c. buttermilk
1 1/2 c. diced rhubarb
1/2 c. chopped nuts
2 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt

TOPPING:

1 tsp. butter
1/3 c. sugar
1 tsp. cinnamon

Mix well the brown sugar, oil, egg, vanilla and buttermilk. Add rhubarb and nuts. Sift together and add the flour, soda, baking powder and salt. Add to other mixture. Spoon into muffin cups and sprinkle with topping. Bake at 350 degrees for 20 to 25 minutes.
