SWEET POTATO CASSEROLE 
2 lbs. sweet potatoes, fresh
2 eggs, beaten
1/2 stick butter, melted
1/2 c. brown sugar
1 c. buttermilk
1/4 tsp. baking soda
1/2 tsp. nutmeg
1/2 tsp. cinnamon

Cook sweet potatoes until tender. Drain; cool, peel and mash. Combine all ingredients and mix well. Mixture will be soupy. Bake 1 hour at 350 degrees. Serves 10.
