FRUIT SALAD 
1/2 to 1 cantelope, cut in 1 inch chunks
1 apple, chunked
1 sm. can mandarin oranges, drained
Strawberries, halved
Cheddar cheese, 1/4 inch chunks
Lettuce leaves (bibb, red leaf, romaine, etc.)
1 to 2 peaches, 1/2 inch chunks
1 sm. can pineapple chunks
Grapes, halved
Pecan pieces
Swiss cheese, 1/4 inch chunks

In large, chilled salad bowl, combine all above ingredients. May be lightly tossed, or layered. Chill well prior to serving. Line chilled salad bowls with lettuce leaves; then spoon fruit mixture onto leaves. Serve with following dressing.

DRESSING:

1/4 c. honey
1/4 c. pineapple juice
1/3 c. oil
1 tsp. poppy seeds

Combine all dressing ingredients; chill well; shake well before pouring onto salad.
