ROASTED HERBED POTATOES 
18 new white or red potatoes, cut in quarters
6 tbsp. extra-virgin olive oil
1 clove garlic, thinly sliced
1 sprig rosemary, chopped
1 sprig thyme, chopped
Salt and pepper

Preheat oven to 475 degrees. Put potatoes in a roasting pan and sprinkle with above - roast until tender, about 30 minutes.
