SWEET POTATO DELIGHT 
4-6 med. sweet potatoes (yams)
1/4 c. butter
3 lg. eggs, beaten slightly
1 c. brown sugar
1 c. evaporated milk
Cinnamon
Pinch nutmeg
1/4 c. orange juice

Cook sweet potatoes and puree or mash. Combine all ingredients and pour into 2 quart casserole.

TOPPING;
1/4 c. butter
1 c. corn flake crumbs
1/2 c. chopped nuts
1/2 c. brown sugar

Sprinkle topping on potato mixture. Bake, uncovered at 325 or 350 degrees until hot. Do not put topping on until ready to bake.
