SWEET AND SOUR CABBAGE 
1 lb. bacon
1 lg. onion
1 lg. head of red cabbage
1 lg. apple
1 c. sugar
1 c. vinegar (cider)

Brown bacon and onions, then drain off most of the grease. Add chopped cabbage, and chopped apple to bacon and onion and pour sugar and vinegar over cabbage. Stir occasionally and allow to simmer, covered until tender.

Tip: If liquid evaporates too quickly add more sugar and vinegar - always equal amounts. Potatoes may be used in place of cabbage. (Hot German Potato Salad). Excellent change.
