GREEK SPINACH 
2 (10 oz.) pkgs. frozen chopped spinach
6 eggs, slightly beaten
6-8 tbsp. flour
1/2 c. melted butter
1/2 lb. American cheese, cubed
2 lbs. fine curd cottage cheese
1/2 lb. brick cheese, cubed

Bring spinach to a boil or until spinach thaws; drain well. Mix eggs, spinach, melted butter flour and cottage cheese. Fold in cubed American and brick cheese. Place in buttered casserole dish and bake for 45 minutes, covered. Then bake 15 minutes with cover off. Use 350 degree oven. Serves 8.
