SWEET POTATO SOUFFLE 
1 can condensed milk
1/2 tsp. salt
1 tsp. lemon juice
3 c. mashed sweet potatoes
1/2 c. sugar
3 tbsp. melted butter
2 eggs, slightly beaten

In large bowl, mix all ingredients with wooden spoon until fluffy. Place in baking dish. Mix: 1/2 c. brown sugar 1 tsp. nutmeg 1/2 c. sugar 2 tbsp. water 1 tsp. cinnamon

Spread thinly over souffle. Bake at 325 degrees for 1 hour, or slightly longer at higher altitude.
