GERMAN SPINACH SALAD 
1 lb. sm. fresh spinach leaves
1/2 c. mayonnaise
1/2 c. dairy sour cream
1 can anchovies, drained and minced
1 1/2 tbsp. chopped green onion tops
1 1/2 tbsp. minced parsley
1 1/2 tbsp. vinegar
1 1/2 tbsp. fresh lemon juice
1 garlic clove, minced
1 c. Cheddar cheese cubes
1 c. garlic croutons

Thoroughly wash and dry the spinach. Mix the remaining ingredients except the cheese and croutons. Add the dressing to the spinach and toss lightly. Garnish with the cheese cubes and croutons. Serves 4-6.
