MINIATURE CHEESECAKES 
24 baking cups
1 box vanilla wafers
2 pkg. (8 oz.) cream cheese, softened
1 c. sugar
1 egg
1 tsp. vanilla
1 can cherry pie filling

Place 1 paper baking cup in cup of cupcake tin. Place 1 wafer in each cup, flat side up. Beat cream cheese until fluffy. Add sugar and beat. Add egg and vanilla and beat again. Spoon 1 tablespoon filling in wafer cup. Bake at 350 degrees for 20 minutes. While warm, spoon 3 cherries (pie filling) into each cup.
