DATE NUT BREAD 
Save Campbell soup cans in advance -- approximately 16. Makes an excellent gift when wrapped in festive plastic-wrap.

2 c. dates, chopped
1 c. raisins
1 c. cherries, chopped
2 tsp. baking soda
2 c. boiling water
2 tbsp. butter
2 c. sugar
2 eggs
4 c. all-purpose flour, sifted
2 tsp. vanilla
1 c. nuts, chopped
1/2 tsp. salt

Mix dates, raisins, cherries, baking soda and boiling water together and let cool. Blend butter, sugar and eggs and add. Then add flour, vanilla, nuts and salt. Fill can a little more than half full. Bake at 350°F for 45 minutes. Press down on bread -- when it springs back it is done.
