1 cup chopped dates 1 cup boiling water 1 tbsp. shortening 2 cups all-purpose flour 3 tsp. baking powder 1/2 tsp. salt 3/4 cup sugar 1 egg 1 cup chopped nuts Preheat oven to 325°F. Grease loaf pan. Combine dates, boiling water and shortening. Cover and cool. Combine flour, baking powder and salt. Set aside. Cream sugar and egg together. Add to date mixture alternately with dry ingredients. Stir in nuts. Pour into greased loaf pan. Bake at 325°F for 50 to 60 minutes. Let stand 20 minutes before baking! Cool on wire rack. Submitted by: Meghan |
