YELLOW SQUASH CASSEROLE 
4 c. cooked yellow squash
1/2 onion, chopped
1/2 bell pepper, chopped
2 eggs, beaten
1/2 c. milk
3/4 c. grated Cheddar cheese
1 c. cracker crumbs
Salt & pepper to taste

Cook squash and mash. Cook onion and pepper in butter until tender. Mix with other ingredients. Keep a small amount of cheese and cracker crumbs for top. Bake in a greased 2 quart casserole for 45 minutes at 350 degrees. This may be prepared ahead of time and freeze well.
